This yeast strain comes straight from America's bourbon country! Used in the production of bourbon whiskey, this yeast is now available to the homebrewer, thanks to White Labs! This strain tends to produce a malty character, complete with caramel notes, that is balanced by a moderate ester profile. It can be used in high-gravity beers, such as barleywines and Russian Imperial Stouts. It works well, even with bases that include rye or corn. An interesting strain with a high alcohol tolerance and medium flocculation that ferments at slightly higher temperature than most ale strains.
