Are you looking to perfectly recreate the classic beers of the West Flanders region of Belgium? As far as your yeast and bacteria blend goes, look no further than the Flemish Ale Blend from White Labs! This is a proprietary blend which combine Saccharomyces and brettanomyces yeasts with Lactobacillus and Pediococcus bacteria in the perfect proportions to create West Flanders sour ales, most notably Flanders red and brown ales, although many other Belgian sour ales can be made with this blend as well. This blend can create complex sour ales with more stone fruit character than other blends. A yeast starter is not recommended with this strain, as making a starter can throw off the proportions of yeast and bacteria. Instead, pitching of multiple packs is preferred.
