A blend of saccharomyces and brettanomyces strains, this blend produces phenolics and mild fruit flavors, giving a complex spice character to beers. These characteristics increase with fermentation temperatures. The brett character is subdued, but gives a classic brett flavor to beers. This is a highly attenuating strain with a wide temperature range that runs from the higher end of ale temperatures up to 85F. Perfect for a wide range of Belgian styles, this is a strain for lovers of classic trappist beers!
