Comet is an American hop variety that was originally released as a bittering hop in 1974. At the time, it was one of the high alpha varieties available. However, due to development of other high-alpha hop varieties, production of Comet slowed to a halt during the 1980s. This hop variety is making a comeback, and finding new life as a dual purpose hop. While still great for bittering, it has a strong grapefruit and citrus characteristic, with hints of grass. Brewers have been using Comet more and more as a late hop addition to give their beers a pungent and pronounced grapefruit aroma. This hop pairs well with other American varieties such as Citra.
