Old World Saison Blend is a perfect melding of two classic saison strains, brought to you by Escarpment Labs! Balanced fruit and peppery spice with an ultra-dry finish. Fast attenuation down to very low final gravity. This yeast blend is ideal for the production of saisons and farmhouse ales of all kinds. One of the strains in this blend contains the STA1 gene, meaning it is diastatic and can ferment wort to a very dry finish. Production of complex fruit and black pepper notes is a characteristic of this blend. Fermentation with Old World Saison blend is reliable, fast and exhibits a high degree of attenuation. Escarpment Labs encourages a free rise fermentation for optimal results, starting at 77F and allowing to rise to around 80F for optimal results.
ICE PACK INCLUDED
We include complimentary ice packs with ALL liquid yeast orders (if required), but cannot guarantee that the ice packs will stay cold during transit, and thus the yeast can potentially be exposed to hot temperatures. We highly recommend ordering dry yeast during the hot summer months or if you are ordering from a warmer climate. Many times during the winter an ice pack is not needed so we make the determination based on current temperatures and the destination!
