A bold new twist on the IPA, She's a Brut, Clark! is our play on this up-and-coming style! We start with a very light base that contributes lots of very fermentable sugars to get the dryness that we want, which includes locally-produced Sugar Creek Pilsner malt! Adding a few specialty grains such as rye and wheat, we then layer Nelson Sauvin, Hallertau Blanc and Mosaic hops in the beer to give a crisp hoppiness that is accentuated by the dryness of the beer. Additional dry hopping adds even more hop goodness to this beer, giving it a great flavor and aroma. Try out this dry Brut Ipa...She's a Brut, Clark!

Amylase
I varied the recipe a touch and added one teaspoon of amylase to the wort at pitch temp. My gravity finished out at 1.00 and it is bone dry, very aromatic with lots of warming tropical notes, and no residual sweetness. I also used 6oz priming sugar instead of the usual five to up the carbonation. This recipe is a keeper for sure and is already a hit with my friends. I highly recommend this beer!
