Ultra-Ferm from White Labs is a highly concentrated amyloglucosidase from selected classical strain of Aspergillus niger. It has three main applications in brewing: to reduce saccharification times, to saccharify unmalted cereal brews, and to increase attenuation. It can also be used to make light beers or dietetic beers. Used at the beginning of the mash, this enzyme will help to break down sugars and make a more attenuative beer (aka a beer with more fermentable sugar, resulting in a dryer beer). This is a 10 ml container. We have brought in this in by popular request from some of our customers. Try it out the next time you need increased attenuation and faster saccharification times!
Ultra-Ferm is added at the beginning of your all-grain mash. One vial of Ultra-Ferm is enough for a typical 5-gallon batch.
