Malolactic fermentation (MLF) is the process by which a set malolatic cultures convert excess malic acid in wines to lactic acid. The overall result of this process on wines leaves them smoother and more mellow, with less of the harsh flavors that are associated with malic acid. Malolactic cultures are generally added to must once primary fermentation has brought the must down to 5 Brix. This set of malolactic cultures is perfect for use in winemaking from grapes or juice, and some vintners have reported great success when using these cultures with cider as well. White Labs recommends caution when using malolactic cultures with wine kits, as the sorbates in wine kits can adversely affect the malolactic cultures (as well as the fact that the acidity in wine kits has usually been optimally balanced by the manufacturer.)

We include complimentary ice packs with ALL liquid yeast orders (if required), but cannot guarantee that the ice packs will stay cold during transit, and thus the yeast can potentially be exposed to hot temperatures. We highly recommend ordering dry yeast during the hot summer months or if you are ordering from a warmer climate. Many times during the winter an ice pack is not needed so we make the determination based on current temperatures and the destination!
