BrewTan B is a fantastic product for promoting shelf life and flavor stability in beer! A tannic acid product derived from natural plant materials and designed specifically for use in the brewing industry, BrewTan B reacts with wort proteins, specifically proline and –thiol –containing proteins, and helps them to coagulate and settle out of beer. However, it leaves foam-positive proteins completely intact! The upshot is that this inhibits lipid and protein oxidation, keeping your beer fresh and flavorful for longer! Used at a rate of 1/4 tsp per 5 gallons, BrewTan B can be dissolved in warm water, then added to either the mash or boil. This solution can be added to the mas water before mashing. If using in the boil, It is suggested to add before any other fining agents, such as whirlfloc or Irish moss, and to add in the last 5 minutes of boiling.
