Chitosan is a fining agent for use in clarifying of wine. It has a positive charge and binds with negatively charged ions in solution, helping them to settle out of solution and leaving a clearer wine. This 32 oz package is good for treating large quantities of wine in large fermenting vessels. It is used just after degassing the wine, and is mixed in thoroughly to the wine. Shake before use and gently stir in 20 to 25 fl. oz. of Chitosan per 100 gallons of wine. Bench trials are recommended before fining large tanks.
