Be careful which yeast you use.
I got this lager extract kit as a gift, and then I bought Wyeast #2112 California Lager yeast -- one of the two recommended yeast strains -- for the fermentation. I fermented at 56 degree, in accordance with the kit's instructions. The attenuation was poor. When I went back to check the number of yeast cells contained in the yeast packet, I noticed that this particular lager yeast strain is not recommended for cold fermentations! Its recommended temperature range is 58-68 degrees. This likely explains the poor attenuation. The kit is intended for the first-time lager brewer, so the recommended Wyeast #2112 California Lager yeast is probably a good selection for novice brewers who typically lack the equipment needed to cold brew. But then the instructions should point out that you need to use warmer fermentation temperatures if you choose the Wyeast #2112 California Lager yeast. This lager is already a low ABV beer (3.3 - 3.6). Poor attenuation results in a really weak beer (ABV = 3.0). So beware of this yeast selection issue if you are concerned about the beer's alcohol level. On the up side, the kit's recipe is very simple, so it actually is a good extract kit for a first time lager brewer. Just be careful about which yeast you use.
