Bit O' Funk is a bit funkier than Where da Funk?! It has a Brettanomyces bruxellenis in addition to the two Saccharomyces strains in Where da Funk. This Brett strain gives a of a pronounced, classic Brett funk to beers. The Saccharomyces strains lend themselves to primary fermentation, while the Brett brux strain will allow for the development of classic sour notes over the course of secondary and aging. It will take extended time (3 months or more) to develop this funk.
